Avocado Basil Salad with Sweet Garlic Vinaigrette

(serves 4)

8oz penne pasta

2 avocados, sliced

¾ cup grape tomatoes, halved

1/3 cup fresh basil, chopped

½ small red onion, thinly sliced

¼ cup pine nuts, toasted

4-6 tablespoons Sweet Garlic Vinaigrette

¼ Parmesan, shaved (fresh is best)

 Cook pasta according to package directions. Drain.

Meanwhile, lightly toast pine nuts in pre-heated oven or in pan on stove. In a large bowl combine Sweet Garlic Vinaigrette with pasta and pepper, and salt to taste. Add the tomatoes, basil, onion and stir. Transfer to a serving bowl and garnish with avocados, pine nuts and cheese.
