Chopped Thai Salad

For the Salad

2 cups Napa cabbage, chopped into bite size pieces

2 cups romaine lettuce, chopped into bite size pieces

1 cup prepared shredded carrots

1 red bell pepper, thinly sliced into bite-sized pieces

1 small English cucumber, halved lengthwise, seeded and thinly sliced

1 cup cooked and shelled edamame

2 medium scallions, thinly sliced

1/2 cup loosely packed chopped fresh cilantro

Wonton strips for garnish

Fresh lime wedges for garnish

For the Dressing

1 cup T.Lish Asian Sesame + more for desired consistency

1/2 cup all natural, creamy peanut butter


For the dressing, whisk together the T.Lish Asian Sesame and peanut butter to desired consistency. Refrigerate until ready to serve.

For the salad, combine the romaine and napa cabbage in a large bowl and lightly toss with dressing to combine. Add remaining ingredients, except for garnish. Add more dressing if desired and toss again. If you aren’t serving right away, serve the dressing on the side so the salad doesn't get soggy. Garnish with wonton strips, cilantro and lime.
