Thai Noodle Salad with Asian Peanut Sauce

Serves 4-6
Total time: 30 minutes

1 (16 ounce) package uncooked rice or soba noodles

1 pound boneless, skinless chicken breast, cooked or grilled and sliced into strips 

1 cup julienne-sliced carrot 

6 green onions, chopped 

1 red bell pepper, seeded and cut into strips

1/2 cup fresh cilantro leaves, chopped 

1/2 cup chopped roasted peanuts, for garnish

1/2 cup all natural, creamy peanut butter

1 1/2cups T.Lish Asian Sesame

1 lime, cut into wedges


Cook noodles according to package directions. Prep the remaining ingredients. Make the peanut sauce by whisking together the peanut butter and T.Lish Asian Sesame. Place noodles in bowl and toss together with some of the peanut sauce. Add the additional vegetables and mix. Add more peanut sauce, as needed. Garnish with cilantro, peanuts and fresh lime. Serve immediately or store in refrigerator. Is a great dish to make ahead.
