TURKEY & CHIPOTLE TACO SALAD
Total time: 30 minutes
1.5 lbs. ground turkey
1 Onion, diced
3 small zucchini, diced
1 large red bell pepper, diced
1 ½ cups grape tomatoes, halved
4 cups romaine hearts, chopped
1 jalapeño, diced
¾ cup cilantro, chopped for garnish
1 cup Monterrey Jack cheese, shredded
1 avocado, sliced
2 tablespoons olive oil
1 lime, cut into wedges
Heat 1 tablespoon olive oil in large skillet over medium high heat. When hot, add onion and bell pepper and cook about 2-3 minutes. Add jalapeno and zucchini and cook an additional 2-3 minutes. Once cooked, season with salt and pepper and transfer to a plate.
In same skillet, add 1 tablespoon olive oil. Cook turkey 4-6 minutes, breaking it up into small pieces until browned and cooked through. Mix veggies into turkey.
In a bowl, mix together the lettuce and enough T.Lish Chipotle to lightly coat.
To plate, place lettuce onto plate, top with meat and vegetable mixture. Garnish with cheese, avocado, cilantro, sour cream and fresh lime. Serve with tortilla chips.
